These wraps would work great for finger foods or an appetizer. Each wrap filled with fresh and tasteful veggies will not be one to disappoint.

  • INGREDIENTS

    • Zucchini, cut lengthwise into slices
    • Olive Oil
    • Salt
    • Pinch freshly Ground Black Pepper
    • Store-bought Hummus
    • Whole-Wheat Wrap Bread 
    • Pine Nuts, toasted
    • Medium Red Bell Pepper, thinly sliced
    • Baby Spinach leaves
    • Red Onion ,thinly sliced into half moons
    • Fresh Mint Leaves
  • DIRECTIONS

    1. Preheat the grill or grill pan over medium heat.

    2. Brush both sides of the zucchini slices with the oil and sprinkle with the salt and pepper.

    3. Spread the hummus over each piece of bread.

    4. Sprinkle pine nuts on top. Top with  zucchini, red pepper, spinach, sliced onions, and mint.

    5. Roll each of them up and cut in half on a diagonal.
